Did someone say it’s ‘National Pasta Day’?

There are national days for all sorts of things these days. Did you know this Sunday is “Caps Lock Day”!!? – Secretly intrigued? Find out more here.

Anyway, back to today. It’s National Pasta Day [insert happy dance emoji here]…and a day about any item of food is a day worth celebrating! There is a wealth of pasta types out there and even more delicious recipes. But, did you know there are 2261 pasta recipes just on allrecipes.co.uk?? As I am a lover of all things pasta, I did consider making it my mission to try all of them…but my skinny jeans had strong objections. With so many recipes out there, it can be a task to find a good one so I thought I’d share my top 3 mid-week pasta recipes that are quick, easy and super yummy.

1. Spaghetti con gamberetti e rucola
(a.k.a. Spaghetti with Prawns and rocket)

This recipe contains wine so of course it makes it into my top 3! It has a few simple ingredients but it’s so tasty!  Thanks Jamie.

2. No jar and one pot fajita pasta bake.

This is a great recipe to use up unused veg and milk. We mix this recipe up and make it our own. It states to use chicken but we actually skip that part and have it as a veggie meal and says garlic powder, but we tend to prefer fresh garlic.

Don’t be fooled by how runny it looks, it does get thicker! (Tip: don’t leave the pasta to boil like you would if it was in water – keep stirring it!)

Also, one pot = less washing up…BONUS! This was a huge influence when picking it for the top 3!

3. Carbonara

This recipe always confuses me – the carbonara sauce is simply cheese and egg..! But it works, honestly!
